Description
This creamy chicken and pea dish is a delicious comfort food, perfect for any family dinner.

- 8 tablespoons unsalted butter (divided)
- 1 1/2 pounds boneless skinless chicken breasts (cut into bite size pieces)
- 1 medium green bell pepper (diced)
- 1 small yellow onion (diced)
- 8 ounces sliced mushrooms
- 3 cloves garlic (minced or 1 tablespoon preminced garlic)
- 1/2 cup all purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine (or white cooking wine)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 4 ounces jar diced pimentos (drained)
Instructions
- In a stock pot or dutch oven, heat 4 tablespoons butter over medium high heat until melted.
- Reduce the heat to medium. Add in the diced chicken and sauté for 10-12 minutes until browned and cooked through. Remove the chicken from the pan to a separate plate.
- Add in the remaining butter, increase the heat to medium high heat and cook until the butter is melted.
- Add in the bell pepper, onions and sliced mushrooms. Sauté for 8-10 minutes until the veggies are softened.
- Add in the minced garlic and cook for 30-60 seconds until you can smell the garlic.
- Add in the flour, salt and pepper. Stir and cook for 1-2 minutes.
- Slowly stir in the chicken broth while stirring until the flour is combined and there are no lumps in the flour.
- Stir in the dry white wine, heavy cream, peas and pimentos. Return the chicken back to the pan. Stir until combined.
- Bring the mixture to a simmer and cook for 10-15 minutes until the chicken and peas are tender and the mixture is thickened. Continue to stir every few minutes while cooking so that the mixture does not burn or stick to the bottom of the pan.
- Serve with biscuits on top and enjoy.
Notes
- This dish pairs well with hot biscuits.
- You can substitute the chicken broth with vegetable broth for a vegetarian version.
