A delightful recipe featuring roasted spiced chickpeas served in pitas with fresh veggies and a creamy sauce.

- 2 (15 oz) cans chickpeas (also called garbanzo beans)
- 3 tablespoons olive oil
- 2 teaspoons garam masala
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- 1 teaspoon chili powder
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon granulated sugar (optional)
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- 1/2 cup mayo
- 1 to 2 large limes
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 1 tablespoon diced jalapeño
- 4 pitas
- 1 head lettuce leaf
- Cucumber
Instructions
- Preheat oven to 400°F (200°C). Drain and rinse chickpeas, then dry them in a salad spinner or with paper towels.
- Generously grease a sheet pan with cooking spray. Add chickpeas to the prepared sheet pan. Drizzle with olive oil and add all seasonings (including sugar if using). Toss everything until well coated and spread in an even layer.
- Roast for 18–22 minutes, shaking the tray halfway through, until crisp but not hard. Remove and set aside.
- Zest and juice the limes to get 1/2 teaspoon zest and 2-1/2 tablespoons juice. Blend zest and juice in a food processor or blender with all sauce ingredients, seasoning to taste with salt.
- Char pitas/naans (optional). Chop lettuce and add to a large bowl; toss with about 1/3 cup of the sauce until well coated.
- Divide saucy lettuce between the charred pitas and top each with 1/4 of the chickpeas. Add any veggies you’d like, drizzle more sauce, and enjoy promptly!
Notes
- Turmeric can dye surfaces and sheet pans; line with parchment paper to avoid stains.

- These are messy, so serve with a fork to scoop what falls out back into the pitas.
