Description

A delicious and hearty crock pot chicken curry made with tender chicken, vegetables, and coconut milk.


Ingredients

  • 1 1/2 pounds chicken breasts (diced into 1 inch pieces)
  • 1 pound Russet Potatoes (peeled and diced into 1 inch pieces)
  • 2 carrots (peeled and diced)
  • 2 tablespoons yellow curry powder
  • 1 can (14 oz) full fat coconut milk
  • 1 fresh lime (juiced)
  • 1 tablespoon minced garlic
  • 1/2 cup chicken broth
  • 1/2 teaspoon ground ginger
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 2 tablespoons cornstarch

Instructions

  1. Add all the ingredients to a crock pot.
  2. Stir to thoroughly combine all the ingredients.
  3. Cook on low for 4-5 hours.
  4. Serve as is or over rice and enjoy!
