Description

Delicious salmon fillets baked with a medley of fresh vegetables, drizzled with a zesty honey lemon sauce.


Ingredients

  • 4 pieces salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 large zucchini
  • 1 red bell pepper
  • 1 cup cherry tomatoes
  • 1 lemon (juiced and zested)
  • 1 tablespoon honey
  • to taste garlic powder
  • to taste onion powder
  • to taste dried oregano
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine sliced zucchini, chopped red bell pepper, halved cherry tomatoes with olive oil and seasonings; toss well.
  3. Spread the vegetable mixture on one side of the baking sheet.
  4. Place seasoned salmon fillets on the other side, drizzling them with remaining olive oil.
  5. In a small bowl, whisk together lemon juice, zest, and honey; pour half over the salmon.
  6. Bake for 15-20 minutes until salmon is opaque and veggies are tender.
  7. Drizzle remaining sauce over everything before serving.
