- 2 tablespoons olive oil
- 2 large zucchini
- 1 red bell pepper
- 1 cup cherry tomatoes
- 1 lemon (juiced and zested)
- 1 tablespoon honey

- to taste dried oregano
- to taste salt
- to taste pepper
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine sliced zucchini, chopped red bell pepper, halved cherry tomatoes with olive oil and seasonings; toss well.
- Spread the vegetable mixture on one side of the baking sheet.
- Place seasoned salmon fillets on the other side, drizzling them with remaining olive oil.
- In a small bowl, whisk together lemon juice, zest, and honey; pour half over the salmon.
- Bake for 15-20 minutes until salmon is opaque and veggies are tender.
- Drizzle remaining sauce over everything before serving.
