- 3 (15 ounce) cans white kidney beans, drained and rinsed
- 2 cups potatoes (such as gold or russet), diced
- 1 teaspoon italian seasoning (or oregano)
- 1/2 cup heavy/whipping cream (optional)
- 1/4 cup parmigiano reggiano (parmesan cheese), grated
- salt and pepper to taste
