Description

A delicious corned beef Reuben sandwich with melted Swiss cheese, sauerkraut, and Russian dressing on gluten-free rye bread.


Ingredients

Scale
  • 1 tablespoon salted butter, room temperature
  • 2 slices rye bread (gluten-free for gluten-free)
  • 1/2 cup swiss cheese, shredded (or 2 slices), room temperature
  • 2 ounces cooked corned beef, sliced or shredded, warm
  • 2 tablespoons sauerkraut, squeezed and drained, coarsely chopped
  • 1 tablespoon russian dressing (or thousand island dressing)

Instructions

  1. Spread butter on one side of each slice of rye bread.
  2. Layer the cheese, corned beef, sauerkraut, and dressing on the unbuttered side of one slice of bread.
  3. Top with the other slice of bread, buttered side out.
  4. Heat a skillet over medium heat and grill the sandwich until golden brown and the cheese is melted, flipping once.
