Ingredients

- 15 ounces coleslaw mix
- 1/2 cup green onions (sliced thin)
- 1 package dry ramen noodles (crushed)
- 1 6-ounce can mandarin oranges (drained)
- 1/4 cup cashews (chopped and lightly salted)
- 1/2 cup olive oil
- 1/3 cup rice vinegar
- 1/4 cup sugar
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
Instructions
- In a large mixing bowl, add the coleslaw mix, green onions, crushed ramen noodles, mandarin oranges, and cashews. Set aside.
- In a small mixing bowl, combine the oil, vinegar, sugar, soy sauce, and lime juice. Whisk until combined.
- Drizzle the dressing over the salad and toss to coat. Serve immediately. Enjoy!
Notes
- This salad can be made ahead of time, but add the dressing just before serving for the best texture.
