Description
Delicious roasted herb potatoes that are crispy on the outside and fluffy on the inside.
Ingredients

- 6–8 large russet potatoes, peeled and cut into 1 1/2 to 2 inch chunks
- Juice of 1 lemon
- ¼ to 1/3 cup olive oil, butter, or a combination
- ½ tsp kosher salt
- ½ tsp cracked black pepper
- 1 1/2 tbsp dried herbs (oregano, thyme, and rosemary recommended)
- 1 whole garlic bulb, broken into about 4 pieces (optional)
Instructions
- Place the peeled and chunked potatoes in salted boiling water and parboil them for 3-4 minutes. This step softens the potatoes slightly without cooking them fully.
- While parboiling, preheat your oven to 375°F (190°C). Place a baking pan in the oven to heat thoroughly. A glass or metal pan is suitable, and a hot pan prevents the potatoes from sticking.
- Drain the potatoes after parboiling and let them stand for 5 minutes to allow excess moisture to evaporate.
- Toss the rested potatoes with the fresh lemon juice so they absorb the citrus flavor evenly.
- Add kosher salt, cracked black pepper, dried herbs, garlic pieces (if using), and olive oil (or oil/butter combination) to the potatoes. Mix thoroughly to coat them well.
- Transfer the seasoned potatoes along with garlic and oil to the preheated baking pan. The potatoes should sizzle on contact, indicating the pan is hot enough to prevent sticking.
- Roast the potatoes for 60-75 minutes until golden brown, turning every 20 minutes to ensure even browning. After the first 10 minutes, gently shake the pan to loosen any sticking potatoes. Remove the roasted garlic if it cooks faster than the potatoes.
Notes
- Keep an eye on the potatoes towards the end of the roasting time to ensure they don’t burn.
- Feel free to adjust the types of herbs based on personal preference.
- For additional crispiness, increase the oven temperature to 400°F (200°C) during the last 10-15 minutes of roasting.
