- 4 slices thick-cut bread (like sourdough or Italian)
- 1 cup cooked, shredded chicken (rotisserie chicken works perfectly)
- 1/2 cup marinara sauce
- 4 slices mozzarella cheese
- 2 tablespoons grated parmesan cheese
- 2 tablespoons softened butter or mayonnaise (for spreading)
- 1/2 teaspoon garlic powder (optional)
- 1/2 teaspoon Italian seasoning (optional)
- Extra marinara sauce for dipping
- Fresh basil or parsley, chopped
Instructions
- In a small bowl, combine the shredded chicken, marinara sauce, parmesan cheese, and the optional garlic powder and Italian seasoning. Mix well until the chicken is evenly coated.
- Spread butter or mayonnaise on one side of each slice of bread. This will be the exterior that gets golden brown.
- On the unbuttered side of two bread slices, layer one slice of mozzarella, half of the chicken mixture, then another slice of mozzarella. Top with the remaining bread slices, buttered side facing out.
- Heat a non-stick skillet or griddle over medium-low heat.
- Place the sandwiches in the skillet and cook for 4-5 minutes per side, or until the bread is golden brown and crisp and the cheese is completely melted. Press down lightly with a spatula for even browning.
- Remove from heat, let cool for a minute, then slice in half and serve immediately.
