- 1 lb medium shrimp, peeled and deveined
- 3 cups day-old rice
- 3 tbsp vegetable oil (canola or peanut)
- 2 cloves garlic, minced
- 4 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 2 tsp sesame oil
Instructions
- Prepare your ingredients by chopping green onions and mincing garlic. Thaw shrimp if using frozen.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
- Add shrimp in a single layer and cook for about 2 minutes per side until pink and opaque. Remove from the pan.
- In the same pan, add another tablespoon of oil if needed and sauté minced garlic for 30 seconds.
- Stir-fry chopped green onions and any desired vegetables for about 2 minutes until tender-crisp.
- Add the day-old rice back to the pan along with cooked shrimp, soy sauce, and sesame oil. Toss until heated through and well combined.
Notes
- Using day-old rice helps achieve the best texture for fried rice.
- Feel free to add other vegetables like peas, carrots, or bell peppers.
- Adjust the soy sauce to taste if you prefer a saltier flavor.
