- 200 g all-purpose flour
- 200 g granulated sugar
- 200 g unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 150 g Rice Krispies cereal
- 100 g white chocolate, melted
- 50 g chopped nuts (optional)
- 250 g cream cheese, softened
- 100 g unsalted butter, softened
- 200 g powdered sugar
- 1 teaspoon vanilla extract
- Optional: red and green sprinkles for decoration
Instructions
- Preheat oven to 175°C (350°F). Grease and line a 9-inch cake pan.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually fold dry ingredients into wet ingredients until combined.
- Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick comes out clean. Allow to cool completely.
- Prepare the crunch layer: Mix Rice Krispies, melted white chocolate, and nuts (if using). Spread evenly over the cooled cake and refrigerate for 15 minutes to set.
- Prepare the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, mixing until fluffy.
- Spread frosting over the crunch layer and decorate with festive sprinkles.
- Chill for at least 30 minutes before serving.

- This cake can be made a day in advance and stored in the refrigerator.
