Description
Delicious oven-baked chicken thighs with crispy skin, sautéed mushrooms, and fresh cherry tomatoes.
Ingredients

- 6 medium chicken thighs (bone in, can use boneless, but will take a bit less time to cook)
- 1/4 cup olive oil
- 2 cloves garlic (minced/diced)
- 1 pinch salt
- 1 tsp oregano
- 4–5 whole mushrooms (quartered)
- 1/2 cup cherry tomatoes (halved)
Instructions
- Put about 3-4 tbsp. of olive oil in your cast iron skillet with the minced garlic on low.
- Place chicken thighs in the pan and cook for about 10 minutes until skin is crispy browned.
- Quarter your mushrooms and put in a bowl with about 3-4 tbsp. of olive oil, pinch of salt, and oregano and toss until lightly coated.
- After 10 minutes in skillet, add mushrooms and cherry tomatoes around chicken.
- Place in oven at 350 degrees for about 30-40 minutes or until the top of chicken skin is lightly browned and chicken thighs are cooked through to 165 degrees F.
- Serve!
Notes
- Adjust cooking time for boneless chicken thighs as they will take less time to cook.
- Ensure that chicken is cooked to an internal temperature of 165 degrees F.
