Oven-Baked Chicken Thighs with Mushrooms and Tomatoes

Description

Delicious oven-baked chicken thighs with crispy skin, sautéed mushrooms, and fresh cherry tomatoes.


Ingredients

Scale
  • 6 medium chicken thighs (bone in, can use boneless, but will take a bit less time to cook)
  • 1/4 cup olive oil
  • 2 cloves garlic (minced/diced)
  • 1 pinch salt
  • 1 tsp oregano
  • 45 whole mushrooms (quartered)
  • 1/2 cup cherry tomatoes (halved)

Instructions

  1. Put about 3-4 tbsp. of olive oil in your cast iron skillet with the minced garlic on low.
  2. Place chicken thighs in the pan and cook for about 10 minutes until skin is crispy browned.
  3. Quarter your mushrooms and put in a bowl with about 3-4 tbsp. of olive oil, pinch of salt, and oregano and toss until lightly coated.
  4. After 10 minutes in skillet, add mushrooms and cherry tomatoes around chicken.
  5. Place in oven at 350 degrees for about 30-40 minutes or until the top of chicken skin is lightly browned and chicken thighs are cooked through to 165 degrees F.
  6. Serve!

Notes

  • Adjust cooking time for boneless chicken thighs as they will take less time to cook.
  • Ensure that chicken is cooked to an internal temperature of 165 degrees F.
