Strawberry Lemonade Syrup

Description

A refreshing strawberry lemonade syrup perfect for topping drinks.


Ingredients

Scale
  • 2 cups diced strawberries
  • zest and juice of 1 lemon
  • 3/41 cup sugar, to taste
  • 1 cup water
  • 1 1/4 teaspoons vanilla bean paste
  • Sparkling water/club soda for topping (Topo Chico works really well)

Instructions

  1. To a small bowl, add the sugar and lemon zest and massage the zest into the sugar until the zest is evenly incorporated throughout the sugar.
  2. To a small saucepan, add the diced strawberries, zest and sugar mixture, lemon juice, and still water. Cook over medium low heat and simmer for 10-15 minutes until the strawberries have softened and broken down.
  3. Strain the cooked syrup to remove the strawberry solids, using a spatula or spoon to extract as much liquid as possible.
  4. Stir or whisk in the vanilla bean paste, and move the mixture to the refrigerator to cool.
  5. Once cooled, add anywhere from 2-4 tablespoons of the syrup to an ice-filled glass, and top with sparkling water.

  • This syrup can be stored in the refrigerator for up to a week.
