- 1 pound tomatillos, husked and rinsed
- 1 jalapeño or serrano pepper
- 2 cloves garlic, unpeeled
- 1/2 white onion, peeled
- 1/2 cup fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon salt
Instructions
- Preheat your oven to broil. Arrange tomatillos, jalapeño, garlic, and onion on a baking sheet. Broil for 5-7 minutes, flipping halfway, until charred.
- Remove the garlic skin and transfer all roasted ingredients to a blender.
- Add cilantro, lime juice, and salt. Blend until smooth or leave slightly chunky.
- Taste and adjust seasoning with more salt or lime if needed.
- Let it chill in the fridge for at least 30 minutes before serving.
