Description

Delicious and healthy banana muffins made with whole wheat flour and sweetened with honey or maple syrup.


Ingredients

  • 3 ripe bananas (mashed)
  • 1 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup chopped nuts or dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the ripe bananas until smooth.
  3. Mix in honey or maple syrup, eggs, and melted coconut oil until creamy.
  4. Gradually fold in whole wheat flour, baking powder, and cinnamon until just combined.
  5. Pour batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes or until golden brown; a toothpick should come out clean.
  7. Allow muffins to cool in the tin for five minutes before transferring to wire racks.

Notes

  • These muffins can be stored in an airtight container for up to 3 days.
  • Add more or less honey/maple syrup depending on your sweetness preference.
