Delicious chocolate chip cookies with a delightful crunch from saltine crackers.
Ingredients

- 1/2 cup (1 stick) unsalted butter
- 1 cup (2 sticks) unsalted butter
- 1/3 cup granulated sugar
- 1 cup light brown sugar, packed
- 1/2 cup light brown sugar, packed
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- 20 saltine crackers
- 6 ounces semi-sweet chocolate chips
- Sea salt, for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the unsalted butter, granulated sugar, and light brown sugar in a large bowl.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together the all-purpose flour and baking soda.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the saltine crackers and chocolate chips until evenly distributed.
- Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
- Sprinkle a pinch of sea salt on top of each cookie, if desired.
- Bake for 12-15 minutes or until golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a more chocolatey flavor, add additional chocolate chips.
- Store cookies in an airtight container for up to a week.
