A delicious cheesy chicken bake that’s easy to prepare.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup salsa verde
- 1 cup rice, cooked
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups cheese, shredded
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup fresh cilantro, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, salsa verde, rice, black beans, corn, 2 cups cheese, cumin, salt, and pepper.
- Pour mixture into a greased 9×13-inch baking dish.
- Top with remaining cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool, garnish with cilantro, and serve.
Notes
- For added flavor, consider using rotisserie chicken.
- Serve with tortilla chips for a crunch.
