Description

This delicious Chocolate Mint Poke Cake is sure to delight with its rich chocolate cake, refreshing mint filling, and creamy ganache topping.


Ingredients

Scale
  • 200g plain flour
  • 200g granulated sugar
  • 75g cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp bicarbonate of soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml whole milk
  • 120ml vegetable oil
  • 2 tsp vanilla extract
  • 240ml boiling water
  • 400g sweetened condensed milk (for the mint filling)
  • 1 tsp peppermint extract (for the mint filling)
  • Green food colouring (optional, for the mint filling)
  • 200g dark chocolate, chopped (for the chocolate ganache topping)
  • 200ml double cream (for the chocolate ganache topping)
  • Whipped cream (for garnish)
  • Chocolate shavings (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare a cake pan.
  2. In a bowl, mix dry ingredients for the chocolate cake including flour, sugar, cocoa powder, baking powder, bicarbonate of soda and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract into the mixture and beat well until smooth.
  4. Gradually add boiling water into the batter and mix until well combined.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a skewer inserted comes out clean.
  6. In another bowl, mix sweetened condensed milk, peppermint extract, and green food colouring to prepare the mint filling.
  7. Once the cake is done, let it cool and then poke holes all over the top.
  8. Pour the mint filling over the cake and let it soak.
  9. For the chocolate ganache, heat the double cream until just boiling, then pour over the chopped dark chocolate and stir until melted and smooth.
  10. Pour the ganache over the cake and allow to set.
  11. Garnish with whipped cream, chocolate shavings, and fresh mint leaves before serving.

  • This cake can be made a day in advance for better flavor.
