This delicious Chocolate Mint Poke Cake is sure to delight with its rich chocolate cake, refreshing mint filling, and creamy ganache topping.

- 200g plain flour
- 200g granulated sugar
- 75g cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp bicarbonate of soda
- 1 tsp salt
- 2 large eggs
- 240ml whole milk
- 120ml vegetable oil
- 2 tsp vanilla extract
- 240ml boiling water
- 400g sweetened condensed milk (for the mint filling)
- 1 tsp peppermint extract (for the mint filling)
- Green food colouring (optional, for the mint filling)
- 200g dark chocolate, chopped (for the chocolate ganache topping)
- 200ml double cream (for the chocolate ganache topping)
- Whipped cream (for garnish)
- Chocolate shavings (for garnish)
- Fresh mint leaves (for garnish)
Instructions
- Preheat the oven to 180°C (350°F) and prepare a cake pan.
- In a bowl, mix dry ingredients for the chocolate cake including flour, sugar, cocoa powder, baking powder, bicarbonate of soda and salt.
- Add eggs, milk, vegetable oil, and vanilla extract into the mixture and beat well until smooth.
- Gradually add boiling water into the batter and mix until well combined.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a skewer inserted comes out clean.
- In another bowl, mix sweetened condensed milk, peppermint extract, and green food colouring to prepare the mint filling.
- Once the cake is done, let it cool and then poke holes all over the top.
- Pour the mint filling over the cake and let it soak.
- For the chocolate ganache, heat the double cream until just boiling, then pour over the chopped dark chocolate and stir until melted and smooth.
- Pour the ganache over the cake and allow to set.
- Garnish with whipped cream, chocolate shavings, and fresh mint leaves before serving.
Notes
- This cake can be made a day in advance for better flavor.
- Store any leftovers in the refrigerator.
