Description

A luscious cherry salad made with marshmallows, cream cheese, and fruit.


Ingredients

Scale
  • 15 regular-sized marshmallows
  • 1 can (12 ounces) cherry 7-Up soda
  • 1 block (8 ounces) cream cheese, softened to room temperature
  • 1 box (3 ounces) cherry Jell-O
  • 1 Tablespoon fresh lime juice (optional)
  • 1 jar (16 ounces) halved maraschino cherries, drained really well
  • 1 can (22 ounces) mandarin oranges, drained really well
  • 3 bananas, sliced
  • 1 tub (8 ounces) whipped topping (COOL WHIP), thawed

Instructions

  1. In a sauce pan over medium heat, combine marshmallows and cherry 7-Up. Whisk together frequently until melted. Remove from heat.
  2. In a separate large bowl, using an electric mixer, combine cream cheese, cherry gelatin mix, and lime juice until smooth.
  3. Slowly stir in marshmallow/7-Up mixture to cream cheese mixture until combined well.
  4. Stir in drained maraschino cherries, drained mandarin oranges, and sliced bananas (slice the bananas just before adding so they don’t turn brown).
  5. Finally, stir in whipped topping.
  6. Note: Do not over-stir this or the mandarin oranges will break up too much. You want to see those whole pieces of fruit in this.
  7. Cover bowl and refrigerate for at least 4 hours.
  8. Optional: garnish servings with a lime twist and a maraschino cherry.

Notes

  • For best results, serve chilled.
  • You can omit lime juice if preferred.
