Description
A luscious cherry salad made with marshmallows, cream cheese, and fruit.
Ingredients

- 15 regular-sized marshmallows
- 1 can (12 ounces) cherry 7-Up soda
- 1 block (8 ounces) cream cheese, softened to room temperature
- 1 box (3 ounces) cherry Jell-O
- 1 Tablespoon fresh lime juice (optional)
- 1 jar (16 ounces) halved maraschino cherries, drained really well
- 1 can (22 ounces) mandarin oranges, drained really well
- 3 bananas, sliced
- 1 tub (8 ounces) whipped topping (COOL WHIP), thawed
Instructions
- In a sauce pan over medium heat, combine marshmallows and cherry 7-Up. Whisk together frequently until melted. Remove from heat.
- In a separate large bowl, using an electric mixer, combine cream cheese, cherry gelatin mix, and lime juice until smooth.
- Slowly stir in marshmallow/7-Up mixture to cream cheese mixture until combined well.
- Stir in drained maraschino cherries, drained mandarin oranges, and sliced bananas (slice the bananas just before adding so they don’t turn brown).
- Finally, stir in whipped topping.
- Note: Do not over-stir this or the mandarin oranges will break up too much. You want to see those whole pieces of fruit in this.
- Cover bowl and refrigerate for at least 4 hours.
- Optional: garnish servings with a lime twist and a maraschino cherry.
Notes
- For best results, serve chilled.
- You can omit lime juice if preferred.
