Ingredients

  • 8 ounces rotini pasta
  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 4 ounces cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs

Instructions

  1. Cook the rotini in salted boiling water until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt, pepper, and garlic powder; cook until browned and cooked through (5-7 minutes), then remove from skillet.
  3. In the same skillet, add chicken broth and bring to a simmer. Stir in softened cream cheese until smooth, then gradually add cheddar cheese until melted.
  4. Return cooked pasta and chicken to the skillet; mix well to coat evenly with sauce. Stir in herbs as needed.
  5. Serve hot, garnished with chopped basil.
