Description

A delicious and hearty black bean soup that is easy to prepare.

Ingredients

Scale
  • ½ tablespoon olive oil
  • ¼ cup chopped onions
  • 1 medium celery stalk (chopped)
  • 1 medium carrot (chopped)
  • ⅛ teaspoon kosher salt
  • 1 clove garlic (minced)
  • ½ teaspoon ground cumin
  • 1 (15-ounce) can black beans (rinsed and drained)
  • 2 tablespoons salsa
  • 1 cup vegetable broth

Instructions

  1. Heat the oil in a 1-quart saucepan over medium heat for about 30 seconds.
  2. Add the onions, celery, carrots, and salt. Cook, stirring occasionally, until the vegetables are soft, about 8 minutes.
  3. Stir in the garlic and cumin and cook for 30 seconds, stirring constantly.
  4. Add the black beans, broth, and salsa. Bring to a boil, then reduce the heat to medium-low. Simmer for 20 minutes, or until the beans are very tender.
  5. Carefully transfer the soup to a blender and blend until smooth, or use an immersion blender directly in the pot.
  6. Taste and adjust the seasoning as needed. Serve hot.

Notes
