- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 1/2 cup chopped walnuts or pecans
- 1/2 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- Grate the zucchini with a box grater. Lightly blot excess moisture if overly wet.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine eggs, granulated sugar, brown sugar, oil, and vanilla extract.
- Pour wet mixture into dry ingredients and stir gently until just combined.
- Fold in the zucchini until evenly distributed.
- Add nuts or chocolate chips if using, and gently mix them in.
- Pour batter into the loaf pan and level the top.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Feel free to substitute walnuts with pecans or omit them entirely for a nut-free version.
- Store leftovers in an airtight container at room temperature or refrigerate for extended freshness.
