Description

A quick and delicious way to enjoy asparagus with a burst of lemon flavor.


Ingredients

  • 1 bunch Asparagus (Trimmed and cut into 2-inch pieces)
  • 2 tablespoons Olive Oil (Extra virgin)
  • 1 tablespoon Fresh Lemon Juice (Juice from about half a lemon)
  • 1 teaspoon Lemon Zest (Zest from half a lemon)
  • 1 teaspoon Garlic (Minced)
  • 1 teaspoon Salt (To taste)
  • 1/2 teaspoon Black Pepper (Freshly ground)
  • 2 tablespoons Fresh Parsley (Chopped)

Instructions

  1. Wash and trim the asparagus, cutting it into 2-inch pieces.
  2. Mince the garlic and chop the parsley.
  3. Heat the olive oil in a skillet over medium heat.
  4. Add the minced garlic and sauté for about 30 seconds until fragrant.
  5. Add the asparagus pieces, salt, and pepper. Sauté for 5-7 minutes until tender-crisp.
  6. Stir in the lemon juice, lemon zest, and chopped parsley. Cook for an additional minute.
  7. Remove from heat and serve warm.
